A fresh healthy salad from our ‘Good for you’ range. Perfect for warm Summer evenings.

Ingredients

(Makes 4 servings)

12 Cos or romaine lettuce leaves
225g Tomatoes, chopped
1 Small avocado, peeled and diced
½ Cucumber, diced
2 Tablespoons olive oil
2 Tablespoon finely grated lemon zest
2 Tablespoon lemon juice
1 small garlic clove, crushed
2 Teaspoons Dijon mustard
Salt and freshly ground pepper
2-3 Tablespoons chopped fresh coriander, min or basil (all three), to garnish

Method

1. Arrange three lettuce leaves on to each of four serving plates.
2. Mix together the tomatoes, avocado and cucumber and pile into the lettuce leaves
3. Make the dressing by mixing together the olive oil, lemon zest and juice, garlic and mustard. Season to taste with salt and pepper
4. Spoon the dressing over the salad and serve at once, scattered with herbs
