This simple sandwich fix can’t fail to satisfy. Great for a sunny weekend lunch!

Ingredients
1-2 Beetroots
Olive oil
Rocket leaves
Goats cheese
Butter
French bread
Salt

Method
1. Skin the beetroots, slice them evenly, toss them in some olive oil and salt, then baked on 190°C/375°F for 20-30 minutes, flipping halfway through.

2. Slice the bread, butter each side, lay down some rocket, a little bit of goat cheese, then your beetroot and some more goat cheese, and slap it together!

3. Fry the sandwich in a pan on medium heat until each side is golden brown, then sliced it in half and enjoy!
