This Arab salad is a perfect accompaniment with fish, meat or vegetables. Its light and vibrant textures help revitalise your palate.

Serves 8

60gm Bulgar Wheat
120ml Boiling Water
1 Large Bunch Flat Leaf Parsley
1 Bunch of Mint
2 Red Onions (Finely Chopped)
4 Plum Tomatoes (Finely Chopped)
4 Lemons (Juiced)
8 Tbsp Extra Virgin Olive Oil
Salt & Black Pepper

 

1. Put bulgar wheat in a bowl cover with boiling water and allow to absorb for 15 minutes

2. Fluff up wheat with a fork, add all your ingredients, mix and taste

3. This salad comes alive after about 20 minutes when the flavours have merged.
