This sandwich is a winner all round… who doesn’t love a classic club!

Serves 1

2 medium slices low-fat turkey rashers
3 medium slices bread, toasted
1 tbsp low fat mayonnaise
4 lettuce leaves, shredded
1 tsp whole-grain mustard
2 or 3 slices of ripe tomato
40g wafer thin roast turkey slices
Salt and pepper
1. Grill the turkey rashers for a minute each side until crispy.

2. Spread one slice of toast with mayonnaise, top with the lettuce. Spread another with mustard and top with the tomato slices and season them both.

3. Place the wafer-thin turkey slices on the lettuce and the turkey rashers on the tomato then build the sandwich: lettuce and turkey slices on the bottom. Followed by toast, then turkey rashers and tomato followed by the last piece of toast.

Secure with cocktail sticks and cut
