Pan fried salmon with a tasty balsamic and sun-dried tomato cous cous. A cracking little dish to help with your January health kick!

Serves 4

50g sun-dried tomatoes
225g cous cous
Pinch garlic salt
1 tsp balsamic vinegar
1 tbsp olive oil
4 x 150g salmon fillets
2 tbsp fresh basil torn
Salt and pepper

Method

1. Place the tomatoes in a small dish and pour over 300ml of boiling water. Cover and leave to soak for 30 minutes. Drain reserving the liquid and chopped very finely.

2. Place the cous cous in a bowl and stir in the chopped tomatoes, garlic salt and balsamic vinegar. Bring reserved tomato liquid to the boil in a small pan and pour over the cous cous. Fluff up with a fork and cover and stand for 20 minutes

3. Heat the oil on a griddle pan, season the fish well with salt and pepper cook for 5 minutes turn and then for a further 2 minutes till cooked.
