Find a healthier balance for 2015. Try out this deliciously fresh salad for a great start to the year.

Serves 1

50g quinoa
2 tbsp chopped mixed olives
½ orange pepper diced
75g feta cheese crumbled
1 tsp capers
2 tbsp prepared pomegranate seeds
2 tbsp olive oil
1 tsp balsamic vinegar
Salt and pepper

1. Place the quinoa in a pan and cover it with boiling water. Boil for 10-15 minutes, until just tender and translucent. Drain and leave to cool.

2. Assemble the salad by mixing the cooked quinoa with the olives, peppers, feta cheese, capers and pomegranate seeds and mix thoroughly. Whisk the olive oil and vinegar to make the dressing. Add the dressing, season with salt and pepper, stir well and serve.
