Recently we caught up with Nigel, one of our Chef Managers. Nigel has been a wonderful and ever-positive part of our Wilson Vale family for over ten years now and when it came to sharing a top trick of the trade with us, according to Nigel it all boils down to teamwork.
*Newsflash!* Nigel has just scooped second place in the Wilson Vale Site Manager of the Year Awards! As an outstanding team leader and consistently excelling in his site management, it is an award thoroughly deserved.
What does your job involve?
My average day involves a variety of aspects from cooking, co-ordinating the kitchen team, facilitating training, ordering food, updating stock sheets, writing menus, planning special days, functions and big events on-site and everything in between!
What do you love about your job?
Everything. I love cooking, food presentation, and motivating staff. A favourite memory is of a black-tie event we hosted on site – it was amazing. I loved it.
What does working at Wilson Vale mean to you?
Wilson Vale is a great company, it’s always been very consistent and kept to its founding values set by Andrew and Carolyne. Wilson Vale always means working with fresh food, an ethos I really value.
What’s your favourite food?
It has to be a Cornish pasty as I come from Cornwall. But, of course, only a homemade one will do!
What ingredient can you not live without?
Bread, I love bread. When it comes to tools and gadgets I couldn’t live without a good knife or a blender.

I was a good dancer.
