Each month we bring a different team member to the table to chat about their role, food and all things Wilson Vale. This month we spoke to Ryan, one of our Area Managers, who decided to leave us with his own cliffhanger when towards the end of our chat casually dropped in that he’d been in EastEnders but didn’t give us any further spoilers!
What does your job involve?
Maintaining all operating standards for Wilson Vale within the restaurants on my patch in Cambridge and London, with a focus on enhancing and maintaining good client relationships, working with and developing our site-based staff in order to provide a seasonal, handcrafted and sustainable offering.
What do you love about your job?
We are all chefs, all the way to our managing directors. We all share the same passion for food – which always makes conversation easy.
What does working at Wilson Vale mean to you?
It’s a privilege to work for a caterer with such a reputation as Wilson Vale. We all have the same goal – creating amazing food whilst delivering it with impeccable service, which will continue to be spoken about long after being eaten.
What’s your favourite food?
It’s too hard to choose – simple food with high quality ingredients.
What ingredient(s) can you not live without?
Salt and pepper. It’s amazing how two simple ingredients can elevate a dish to a whole new level.

Tell us a top tip, trick of the trade?
If your Hollandaise sauce splits, adding an ice cube will always save it.
